Bison - The Healthy Choice

Bison meat is becoming more and more in demand as increasingly health-conscious Americans seek a heart-healthy, lean, red meat. Bison are handled as little as possible and are not subjected to hormones or other questionable drugs or chemicals. Although low in fat, calories and cholesterol, bison meat still retains a robust flavor while remaining tender. Bison meat can be used in any recipe calling for red meat and is always an excellent choice for, grilling. Bison meat is prepared much the same as beef and requires no special handling. The meat cooks faster due to lack of marbling and therefore care must be taken to not over cook.

At one time, approximately 60 million bison roamed the plains of North America.
Bison have an extremely strong herding instinct and do not like to be separated from the rest of the herd.
Bison calves are born a reddish-brown color, commonly called cinnamon. This is nature's way of protecting the calves, as most predators cannot distinguish between red and green. This helps to keep them safe from predators such as wolves, coyotes and mountain lions. At two to three months of age, the calves will turn dark brown like their mothers.
Bison calve at the age of three, and can continue to raise calves until they are well into their 20s.
Bison are the ultimate survivors and resist many of the illnesses and diseases that plague other animals.
